Almond Zucchini Bread | Bolo de Amêndoas e Abobrinha

Nossa que alegria estar escrevendo aqui! Fiquei um pouco ausente do blog, principalmente porque estava no último mês do meu curso de Health Coach pelo Institute for Integrative Nutrition, com novos atendimentos  e projetos rolando e, paralelamente a isso tudo, abrindo um business novo que está me tomando toda energia e tempo do mundo! Super ultra feliz, mas depois conto do business, antes vamos falar desse Bolo de Amêndoas e Abobrinha MARAVILHOSO.

Essa receita é sem glúten, como todas as outras que faço, agrada quem segue o estilo de alimentação paleo, não leva nenhum laticínio e vai deixar o seu dia mais feliz! Quem gosta de cozinhar bolos, pães e afins sem glúten sabe como pode ser difícil achar aquela receita macia e molhadinha… Essa é!!

Uma receita super fácil de fazer,  rica em fibras e gorduras do bem, e uma maneira de combinarmos mais vegetais na nossa alimentação. Eu sei que parece estranho misturar abobrinha em uma receita doce, mas o sabor da abobrinha é super neutro e leve! Fora isso, nos bloqueamos de tantas experiências que poderiam ser fantásticas só porque não parece ser “normal”, ou soa estranho, que muitas vezes nos fechamos na monotonia do dia a dia. Isso vale para qualquer coisa da vida, viu? Mas aqui falando de ampliar e ousar nas receitas do dia a dia.

Receita

Ingredientes:

  • 1 1/2 xic de farinha de amêndoas
  • 1 xíc de abobrinha crua e ralada (aperte bem para tirar a água)
  • 3 ovos (se possível ovos orgânicos)
  • 2 col de sopa de mel ou maple syrup
  • 1 banana media amassada
  • 1 col de sopa de óleo de coco
  • 1 1/2 col de chá de bicarbonato de sódio
  • 1/2 col de chá de sal marinho
  • 1 col de chá de canela em pó

Instruções:

  1. Preaqueça o forno a 350F (180C)
  2. Use dois bowls para misturar separadamente os ingredientes secos e molhados (com excessão da abobrinha). Misture bem.
  3. Inclua a abrobrinha ralada e misture mais um pouco.
  4. Coloque a massa em uma forma (gosto de usar forma quadrada) forrada com papel manteiga.
  5. Asse por 35 a 40 minutos ou até o palito sair limpo.
  6. Deixe o bolo descansar e esfriar por 5 minitos e tire da forma apenas puxando o papel manteiga. Espere esfriar completamente para fatiar!
  7. Enjoy!

Como armazenar? Após uns dois dias prefiro guardar dentro da geladeira em um recipiente fechado para evitar que estrague!

 

Almond Zucchini Bread

I know it sounds funny to combine zucchini in a cake or in a sweet bread recipe, but since zucchinis have a neutral flavor, you wont even feel it! Moreover, zucchinis have a light sweet taste when cook them, so it can be easily combined in many different recipes: breads, tacos, pancakes, etc.

This recipe is paleo friendly, free of gluten and dairy, and it taste delicious! All the bakers know how challenging can be to make gluten free stuff. Not only gluten free, but also recipes low in refined ingredients and sugar. You have to get creative, add spices to enhance flavor, and learn how to use the vast variety of whole ingredients!

I love incorporating vegetables into regular recipes, as a form to add nutritional value to my recipes and increase the amount of fiber per portion. I still see a lot of people during my daily nutrition consultations with a poor diet, with no vegetables at all per day. Vegetables are an incredible source of vitamins, minerals, antioxidants, phytonutrients, and fiber.

Recipe

Ingredients

  • 1 1/2 cup almond meal
  • 1 cup of grated zucchini
  • 3 eggs (preferable organic & pastured eggs)
  • 2 Tbsp of maple syrup
  • 1 large mashed banana
  • 1 Tbsp coconut oil
  • 1 1/2 tsp baking soda
  • 1/2 tsp sea salt

Instructions

  1. Preheat the oven to 350F (180C)
  2. In a bowl, stir all the dry ingredients.
  3. In a different bowl combine all the wet ingredients, but the zucchini.
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir well.
  5. Add zucchini and stir one more time.
  6. Pour the batter into a loaf with parchment paper and place the loaf inside the oven.
  7. Bake it for 35 to 30 minutes or until the edges get brown.
  8. Remove it from the oven and allow it to cool down for 5 minutes or so.
  9. Remove bread from the loaf simply by pulling the parchment paper and let it cool down completely.

How to Store: After 2 days, I strongly recommend you to store your bread inside your fridge, otherwise will go bad really fast!
