Eu amo esse receita, aliás qualquer receita que envolva banana fica uma delicia na minha opinião. Lembro que a primeira vez que fiz, o cheiro de banana foi se espalhando pela casa e não consegui nem esperar esfriar para comer! Além de muito gostosa, agrada a maioria dos públicos, independente da restrição alimentar ou estilo de vida.  Vai bem para quem evita o Glúten, lactose ou derivados do leite da vaca, ou adeptos da dieta paleolítica por ser também sem grãos. Não preciso falar que não sou a favor de nenhum tipo de dieta da moda, até porque isso iria contra o que acredito sobre a nutrição, cada um possui um estilo de vida, um organismo e um metabolismo diferente.

Mas, de volta ao pão… Essa receita fiz com farinhas que naturalmente possuem uma densidade nutricional alta, com menos teor de carboidratos do que as farinhas de grãos, como por exemplo arroz  e aveia, mas possui um teor de gorduras saudáveis maior. Usei farinha de castanha do pará e farinha de coco. A farinha de coco é umas das minhas farinhas prediletas para cozinhar, tem um toque doce natural o que muitas vezes dispensa adicionar ingredientes para adoçar. Você pode substituir a farinha de castanha do pará por farinha de amêndoas, fica gostoso igual! Outro segredo dessa receita são as bananas,  prefira usa-las bem maduras para chegar no ponto doce ideal.

RECEITA:

INGREDIENTES

  • 4 bananas bem maduras
  • 4 ovos inteiros
  • ½ xícara + 2 colheres de sopa. de farinha de coco
  • ¼ xícara + 2 colheres de sopa de farinha de amêndoa
  • 4 colheres de sopa de óleo de coco ou manteiga (se possível orgânica)
  • 1 colher de chá de fermento em pó
  • 1 colher de chá de bicarbonato de sódio
  • 1 colher de chá de essência de baunilha
  • 1 colher de canela em pó
  • Uma pitada de noz-moscada moída
  • Uma pitada de sal marinho

INSTRUÇÕES

  1. Pré-aqueça o forno a 180 graus.
  2. Unte a forma com camada fininha de óleo de coco ou manteiga
  3. Misture todos os ingredientes molhados (baunilha, ovos, óleo de coco / manteiga, banana) em uma tigela e bata com uma batedeira ou use um liquidificador.
  4. Misture todos os ingredientes secos em uma tigela grande (farinha de coco, farinha de amêndoas, o bicarbonato e o fermento em pó, sal e canela).
  5. Despeje todos os ingredientes molhados com os ingredientes secos.
  6. Misture bem com uma colher até que a massa fique homogênea.
  7. Despeje a massa em sua forma levemente untada.
  8. Asse no por 35-50 minutos (meu forno levou 45 minutos, vale verificar após uns 30 minutos.
  9. Esperar esfriar e servir (as vezes não consigo esperar…)
  10. Você pode servir com geleia de frutas, manteiga de castanhas ou como preferir!

Extras:

Menos gordura? Se quiser diminuir a quantidade de gordura, use apenas 2 ovos inteiros + 3 claras. OU use 2 col de sopa de óleo ou manteiga.

Onde encontrar as farinhas?  Lojas de produtos naturais, zona cerealista, lojas virtuais (Zona Cerealista Online) ou feiras de alimentos. Gosto bastante de Bob’s Red Mill que você pode encontrar em lojas virtuais como  Casa Santa Luzia ou Quitanda 

Dados Nutricionais: Essa receita me rendeu 10 fatias. Cada fatia possui em media 190 calorias, sendo 11g de gorduras, 16g de carboidratos (sendo 4g Fibras, 6g açúcar) e 6g de proteína.

I simply love this recipe, actually all recipes that involves bananas end up really tasty in my opinion. Besides the amazing taste, it fits in almost all kinds of publics or even people with food restrictions. I can also say that is a gluten-free, dairy-free, and paleo friendly. And of course that I can’t lose the chance to say that I don’t believe in any type of trendy diets, since that would be totally against what I believe as a nutritionist and what I’ve learned so far, specially because people are so unique and different one from each other, with different lifestyles, organisms and metabolism.

Getting back to the bread, I’ve made this recipe with flours that have naturally high nutrition density, with fewer amounts of carbohydrates when compared with flours from grains (i.e. rice or oats), but with higher amount of friendly fats. I used Brazil-Nuts flour and coconut flour, which is one of my favorite flour to cook due the slightly sweet taste that some times does not requires extra sweeteners. You can play around and change the type of flours, I have tried  almond flour instead of  brazil-nut flour, and worked really well!

INGREDIENTS

  •    4 bananas, fairly ripe
  •    4 whole eggs
  •    ½ cup + 2 tablespoons. of coconut flour
  •    ¼ cup + 2 tablespoons of almond flour
  •    4 tablespoons of coconut oil (or butter – rather grass-fed), melted
  •    1 teaspoon baking powder
  •    1 teaspoon baking soda
  •    1 teaspoon vanilla extract
  •    1 tablespoon of ground cinnamon
  •    Pinch of freshly ground nutmeg
  •    Pinch of sea salt

INSTRUCTIONS

  1. Preheat the oven to 350 degrees.
  2. Grease (with coconut oil/butter) a bread loaf pan
  3. In a mixer, pour all the wet ingredients (vanilla, eggs, coconut oil/butter, bananas)
  4. In a large bowl combine all dry ingredients (coconut flour, almond flour, baking soda and powder, salt, cinnamon).
  5. Pour the wet blended ingredients into the large bowl with the dry ingredients.
  6. With a wooden spoon combine all the ingredients until it becomes homogeneous.
  7. Pour the dough into your lightly greased pan.
  8. Bake at 350 for 35-45 minutes, however start checking after 30 minutes.
  9. Enjoy!

Extra:

Less Fat? Instead of 4 whole eggs, add 2 whole eggs and 3 egg whites. Or just use 2tbs of coconut oil// butter.

Where to find the flours? Healthy stores or online. I specially like Trader Joe’s coconut flour and the majority of Red Bob’s Mill flours.
